Civic Dining, located on the first floor of the Civic Hotel, has reopened with all the flavour of the Mediterranean. Run by Peter Conistis, the restaurant offers Greek-influenced Australian cuisine and has recently been awarded one chef’s hat in the Sydney Morning Herald Good Food Guide
Peter's take on modern Mediterranean offers dishes that are adaptations of traditional food. For example, the kibbeh nayeh incorporates raw diced hiramasa kingfish with bulgar wheat, horseradish tzatziki and nigella flatbread.
A regular visitor to Greece, Peter’s able to combine his knowledge of regional food & cooking with modern ideas. His dishes include both local and imported ingredients incorporating as much fresh seasonal produce as possible. The image (left) is Peter’s Greek lamb; slow braised lamb shoulder with a vine leaf wrapped lamb fillet, sweetcorn polenta, green beans and zhoug chilli relish.
